Alton Brown ending Food Network’s
‘Good Eats’ after 249 episodes

    "Marietta food guru Alton Brown announced yesterday that after 249 episodes, he is shutting down 'Good Eats,' a Food Network staple since 1999.
    Beau Benton, his spokesman, confirmed that 'Good Eats' will no longer be a regular series though Brown does plan three one-hour specials this year. He said Brown was not available for interviews."

Great chefs, culinary gala, tours put
spotlight on sustainable cuisine

    Renowned chefs from across North America, including The French Laundry’s Thomas Keller and Food Network all-star Alton Brown will share their passion for fine dining and environmentally sustainable living when they’re honored at the Monterey Bay Aquarium’s "Cooking for Solutions 2009" on May 15-16, 2009.

    At the two-day celebration, celebrity chefs – selected and recognized by the Monterey Bay Aquarium for their leadership in promoting food practices that protect the health of the ocean and the soil – will create gourmet dishes, host food and wine adventures, and offer cooking demonstrations that feature sustainable seafood and organic ingredients.

    All proceeds support the nonprofit aquarium’s Seafood Watch program, which has worked for the past decade to transform the seafood market in ways that preserve healthy ecosystems and sustain ocean wildlife.

    Title sponsors of "Cooking for Solutions 2009" are Bon Appétit Management Company, an award-winning food service company recognized internationally as a leader in promoting sustainable cuisine; and Coastal Living, a national magazine that celebrates life along the coast and serves as the source of inspiration and information for people who live or dream of living a coastal lifestyle.

    "Cooking for Solutions 2009" is part of the aquarium’s 25th anniversary celebration. Monterey Bay Aquarium opened on October 20, 1984 with a mission to inspire conservation of the oceans.

    Thomas Keller, chef/owner of The French Laundry in Yountville, California and one of the most respected and honored chefs in the United States, will receive the Conservation Leadership Award – Chef of the Year at the eighth annual "Cooking for Solutions" celebration.

    A leading advocate of sustainable seafood and building menus around local, organic ingredients, he’ll be honored along with Educator of the Year Alton Brown – chef, author and host of Food Network’s Good Eats program, and a lead commentator and judge on Iron Chef America.     "Oh, sardines are sexy. And if you don't believe that, you haven't been with the right sardine," quipped Alton Brown during the second panel at the Smithsonian Institution's Understanding Seafood event on March 21. For the other half of the Saturday morning discussion--Sustainability in the Restaurant and in Your Kitchen--chefs, supermarket buyers, advocates and those in the media addressed topics for consumers.
    As in the first panel, it was universally agreed consumers play a vital role in sustainability. AB's statement on the "sexiness" of sardines came as a result of a comment from a panel member in regard to marketing different fish to consumers. Typically in the American fish eating repertoire one finds salmon, tuna, shrimp and trout.
    Tim O'Shea, co-founder of Clean Fish, said expanding the palette is important. As did Chef Jeff Black of the Black Restaurant Group. Chef Bob Kinkead noted consumers dictate what restaurants serve as well. Fish such as swordfish have fallen out of favor and menus reflect this change.
    Chef Black also warned of going too far the other way in creating the new "it" fish using the example of red fish and Chef Paul Prudhomme. After blackened red fish became a culinary hot commodity, the once plentiful fish became nearly wiped out within a few years. Chef Kinkead added, we must protect what we have because the odds are we know most all the seafood species available.
    A lot of pressure, however, is on the consumer. Carrie Brownstein, Seafood Quality Standards Coordinator for the Whole Foods market chain, believes getting to know your fish store is a vital method for the public. Moreover, looking for the Marine Stewardship Council's logo will insure purchasing more environmental friendly seafood. A key element in becoming a better seafood purchaser is talking with your fish monger, said Brownstein.
    When purchasing fish, fresh is not the only option. Frozen is an excellent way to procure seafood. In fact, Alton said he buys a lot of it and in his opinion fish flash frozen immediately after caught is a better in many cases than its fresh counterparts. He reminded us fresh and raw are not the same thing.
    AB asked each member of the panel to name one type of seafood s/he would like more people to be aware of and eat more. The list included, red fish, black cod or sable fish, blue fish, fresh sardines (this was also Alton's pick), mussels and gulf shrimp.

     Working as a cook throughout high school and college, Alton Brown never considered a career in food.  After a decade working as a cinematographer and video director, he realized that he spent all his time between shoots watching cooking shows, reading cookbooks and eating.
     Alton and his wife DeAnna left the film business and moved to Vermont to pursue his first love:  food.  He attended the New England Culinary Institute, but during his years as a culinary student and throughout his restaurant and catering jobs that followed, he couldn’t forget about television.  He started to conceive a new kind of cooking show, one that would entertain and inform with wit and humor.  He started writing Good Eats a show that combines his passion for food with quirky pop culture. Good Eats can be seen on the Food Network.
     His first book, I’m Just Here for the Food was published in April 2002.

Whether it's "60 Minutes" or a reporter from the local daily, the news media is well equipped to track the scent of potential prey...and that prey could be you if your products combine science and food. Even the most remote whiff of controversy is sure to bring the news mob to your doorstep... armed with hostile questions and loaded with attitude. The news media increasingly is compelled to explore the relationship of science to what consumers eat, creating a potential for controversy and, ultimately, consumer mistrust. Mr. Brown's session will illustrate how opening the lab doors to media, communicating proactively and taking responsibility can educate consumers and make them receptive to the important role science plays in food product development.
