Chocolate Covered Nutty Coconut Balls

HARDWARE
Parchment Paper or Foil
Mixing Bowl
Double Boiler or other pan to
    melt chocolate

SOFTWARE
1/2 lb. shredded or flaked
    coconut
1 cup toasted Macadamia
    nuts, chopped
1 cup sweetened, condensed
    milk
1 1/2 tsp. almond extract
12 oz. bag of semi-sweet
    chocolate morsels
1 tbs. shortening

STEPS

  1. Mix the coconut, nut, milk and extract together.
  2. Form into 3/4" balls. Make them really tight.
  3. Leave them out to dry on parchment paper or foil for about 3 to 4 hours or in the refrigerator for 1 hour.
  4. Melt chocolate and shortening together, (probably in a double boiler)
  5. Dip coconut balls in chocolate, let extra ooze off and place back on paper or foil to cool and harden.
