September 26, 2006 DSU's 'Fighting Okra' mascot lands spot on Food Network show The Clarion-Ledger Delta State University’s “Fighting Okra” mascot landed a leading role on The Food Network’s Good Eats, a family cooking show starring Alton Brown. The episode, Okraphobia, will premiere at 9 p.m. Wednesday with additional air dates at midnight Thursday, 9 p.m. Friday, 1 a.m. Saturday and 6 p.m. Oct. 6. The Fighting Okra, whose original 1998 costume was handsewn from a green sleeping bag, nailed a new costume for the gig. “We had been in the talks of getting a new one for a while and once we got the call from the folks at Good Eats, that did spur along the process,” said Jason Umfress, director of career services and assistant to the vice president for student services at Delta State. “He took a unique look at what good could come from okra,” Umfress said of Brown. Delta State’s official mascot is The Statesman. The Fighting Okra is its popular unofficial mascot.
